2GS - what will tuck? stock fenders, air, camber

Ok people, I need some help. Im in search of a set of rollers for the 2GS. MY plan for this year is to just keep the fenders stock with a roll, rear control arms and toe links and then next year build my fenders around a set a wheels.

My qestions is to tuck on stock fenders with them rolled what kind of sizes and offset will be possible. From what I understand 19x9/10 et 30 is pretty easy to fit. With control arms and taking out some camber 5+ degress (from peoples experience) what setups could I run??
